It’s Halloween and time for some spooky fun!
This recipe is adapted from dear old Martha Stewart. She, of course, did not call them dragon scales.
To make these dragon scales you’ll need about 1 pound of Brussels sprouts. Trim the bottoms and separate the leaves to make your scales. This takes some time, but can be done in advance. Next, rinse the leaves and dry them thoroughly.
Preheat your oven to 375 °F and place your dry leaves in a mixing bowl. Toss them with 1 tbsp. of olive oil and 1/4 cup of chopped walnuts (the brains).
Finally, spread the leaves and nuts out on a baking sheet and bake for around 10 minutes or until the leaves are crispy.
Serve on a spooky platter and enjoy!

Husband- A good way to eat Brussels sprouts.
Son #1- Loved the scales, not a fan of the brains.
Son #2- Tried it, but kept asking, “Are you sure these are from a dragon and not a vegetable?”
Finally, we found a way to enjoy Brussels sprouts.
